The Ultimate Breakfast Eggs

Lately I’ve been running in the mornings, and when I get back I’m always famished. I always want something substantial and savory, and usually that means eggs. Usually, I’m too hungry to be imaginative, so I end up hurriedly frying the eggs and topping it with a generous slice of goat cheese before eating them probably a little too quickly. While this is incredibly delicious, today I wanted more decorations. There were some minor mishaps along the way, so the end result wasn’t as aesthetically pleasing as it could have been, but it was delicious and satisfying after a morning workout.

Eggs with Goat Cheese, Onion, and Tomato

2 eggs
1/4 large tomato, sliced
1/4 large onion, sliced
1 clove of garlic, minced or riced
olive oil
1 tsp lemon juice
goat cheese
salt and pepper, to taste

Heat a frying pan over medium-high heat. Add a little olive oil and sauté garlic and onion until slightly softened. Add tomato and cook for another minute, until the tomato starts to fall apart. Remove from pan and place onto your plate. Scrape any residue from the pan, turn the heat down slightly, and heat a little more oil (or butter) for the eggs. Add the eggs and cook however you like (I like mine sunny side up!). Lay eggs on top of the onions and tomatoes in the plate, then sprinkle with lemon, salt, and pepper. Top with goat cheese and enjoy!
